We re-spec'd the stack against menu complexity and peak throughput, migrated the menu (modifiers, combos, printer routing) with no double-keying, and trained front- and back-of-house in person before go-live.

PCI-segmented network rebuild
Cardholder traffic, back-of-house, guest Wi-Fi, and IoT moved onto isolated VLANs. Cloud-managed Wi-Fi with site-survey-backed AP placement, plus managed LTE backup as a primary fail-over for ISP cuts.
